Today I had a craving that would not leave me alone for homemade chocolate chip cookies. I had to take the time and make them, that craving kept tapping me on the shoulder. Here they are, and they were delicious! I am going to share my three favorite recipes for chocolate chip cookies and why. The first comes from my old Betty Crocker cookbook that I got when I graduated in 1978. It is worn, torn, pages stick together, it’s written on and one of the best cookbooks! This recipe, I believe has the best taste of any cookie I have found. It makes the most cookies also depending on how big you like to make them.
RECIPE ONE: 2/3 cup shortening, 2/3 cup butter, 1 cup granulated sugar, 1 cup brown sugar (packed), 2 eggs, 2 tsp. vanilla, 3 cups all purpose flour, 1 tsp. soda, 1 tsp. salt, 12 oz, package semi-sweet chocolate chips. Turn on oven to 375 degrees. Mix together shortening, butter and sugars, then add the rest of the ingredients. Drop 2 inches apart onto an ungreased baking sheet. Bake 8 to 10 minutes or until light brown. Cool slightly before removing from baking sheet.
The next recipe comes from a smaller Betty Crocker cookbook called Baking Classics. This book has been loved also and the pages were falling out so I bought one on Amazon from an individual. I had a hard time finding one but I did. I have a backup should my other disintegrate. This recipe doesn’t make as many cookies but is perfect if you are going to make one big cookie in a cake pan or a heart shaped cake pan for valentines day or a birthday or whatever. Then it can be decorated with icing.
RECIPE TWO: 1/2 cup granulated sugar, 1/2 cup packed brown sugar, 1/3 cup butter, 1/3 cup shortening, 1 egg, 1 tsp. vanilla, 1 1/2 cups all purpose flour, 1/2 tsp baking soda, 1/2 tsp salt, 6 oz semi-sweet chocolate chips. Heat oven to 375 degrees, mix sugars, butter and shortening until creamy, then add in the rest of the ingredients. Drop dough two inches apart onto ungreased cookie sheet. Bake 8 to 10 minutes until light brown. Cool slightly before moving to cookie rack.
The third recipe I made up myself. I wanted a cookie that held together well when made into large cookies and had a nice crisp to it. This I use semi-sweet chocolate chunks instead of chips and I use Kroger brand.
RECIPE THREE: 1 cup shortening, 1/3 cup butter, 1 cup granulated sugar, 1 cup packed brown sugar, 2 eggs, 3 tsp. vanilla, 2 tsp. soda, 3 1/2 cups flour, 1 1/2 tsp salt, 1 1/2 cups semi-sweet chocolate chunks. Mix shortening, butter and sugars, then eggs and vanilla. Mix in remaining ingredients. Drop by golf ball size onto ungreased cookie sheet. Bake for 10- minutes or until light brown. Let cool slightly until moving to the cookie rack.
